Born and raised in Puerto Vallarta, Chef José Manuel studied the culinary arts in this city known for its hospitality industry, then went on to work under renown Chef Bernard Guth of Trio and Vitea. From Puerto Vallarta, he moved on to Tepic, where he worked at the acclaimed Emiliano’s, considered one of Mexico’s top restaurants. Drawing on traditional Mexican cuisine, Chef José Manuel looks to locally available ingredients to add a modern twist to classic dishes.
